Turkey Breast

We had stay-over company, so what better time to try something out?  I used a couple of tips from my friends here.

The package weight was 9.15 pounds, bone in, wings on.  I clipped off the tips.  Brined overnight in pretty much the usual, salt, some brown sugar and spices.  Drained, rinsed and dried.  Gave it an OO rub and then put on a light dry rub, mostly salt, pepper, cumin and, of course, chipotle powder.  Three hours of 50/50 apple and pecan smoke at 220-225.  Cook until the IT was about 155 and then FTC it for about 1.5-2 hours.  Total time was about 5.5-6 hours.  Even the (worthless) little pop up thingy popped when I was done.  Served with mashed sweet potatoes (S&P, butter and maple syrup), fresh peas and a salad.  The company said it was the best turkey breast they ever had.  ;D ;D

Thanks for the comments people.  This one came frozen.  We can usually find fresh ones around Thanksgiving.  I might try a whole small bird for Thanksgiving this year.  There's only two of us here.  The problem is that there's usually a crowd on the weekend.  ;)

Olive Oil.  When you here EVOO, that is Extra Virgin Olive Oil.
