OK, I'm hooked. 1st couple of smokes

I got the Bradley with the slide temp control and found that with only very little playing I could 'set it and forget it!'

150, 175, 200, 225, were all no problem.

Sooo. I brined/cured some turkey legs and some salmon and gave it a go. These were smoked at 175 then ramped up to 200 to finish. Got both recipes here.



Sorry about the prime rib in this picture. My FIL brought it over right when I was in the middle of the salmon so I had to crank another pit up and do them both at the same time.



Today I have canadian bacon going after curing it all week. It's up to 135 IT at 200 cook temp now so it won't be long. The first few slices will be going on a pizza this afternoon.

Next up is salt!

Those turkey legs look incredible!  You ain't no rookie around a smoker, that's for sure.  Like CRG I'm looking forward to your cajun influences here.

That salmon don't look half bad either!  :D  What a FIL, bringing prime rib.

Got the canadian bacon all done and decided some of it needed to go on a pizza, of course along with some left over fajita meat and pepperoni, cheese, etc.......








See if you all can guess which side is mine.

Here is a short shot of my cooking area. Mrs RB and I do 9 competitions a year for bbq. It's our 'get away weekends' and we love it. She gets to listen to music and shop the crafts and I get to compete. We do OK.




Now I have sea salt smoking.

I go all the way to Disneyland just for the Smoked Turkey Legs. Now that I just got my Bradley a couple of weeks ago, I can stay here and get them. Yours look amazing. And WOW on that Prime Rib!!

ron, my cousin lives in New Iberia and enters the Gumbo cookoff every year. Last year he placed 3rd in the professional, this year he didn't place.

I need to go to that, looks like a good time.

There is gonna be 14 contests in LA next year and all of them but 1 are IBCA. My next one is Gonzalas in March. I may do Marksville but not sure yet, they don't pay well and will have no music, just gambling.......
