Howdy, from Fort Worth, TX

Hello, all. I love to cook, grill, bake, etc... if it involves food, I love it. I have had a few el cheapo cylinder smokers that I have used to smoke Thanksgiving turkeys, but other than that I am a newbie to the world of smoking food. I am about to get a smoker for my 10th anniversary gift from my wife and I have been researching smokers to see what I want. I have decided on the Bradley Digital Electric (4-shelf.) I think it will be used quite often, especially after I get some pointers, recipes, and hints from this great forum! Brisket, pork butt, bacon, ribs, ham, cheese... they are some of the many things I will want to try out soon.

I look forward to contributing eventually once I find my smoking groove.

Welcome, BT71!  I'm new to the forum too and live in Dallas.

I've been lurking on here for a couple weeks and can tell you that there is some incredible information and a wealth of knowledge.
Spend some time poking around and I'm sure you'll learn something.

Well, I am actually trying to decide between the Bradley Digital 4 Rack or the Original 4-Rack and then get an Auber PID to use with it. It appears the OBS + Auber > BDS . Is that correct?

BT, I have the JB4rk digital and am happy I got that one. When I get into sausage making, I will get a PID.

I don't feel it it necessary doing ribs, pork butts, brisket, cheese, ham.

Bacon, I'm not sure about.

I went the OBS + PID route, and I'm glad I did. That setup's net cost was about the same as the 4-rack digital smoker would've been.

I like to smoke larger cuts like butts & briskets overnight due to my busy schedule, and the Auber PID gives me peace of mind. I don't have to worry about temperature swings or the bracket-rounds-fire-for-effect procedure that comes with using just the OBS temp slider. I've gone over 24 hours' smoke/cook time with my current setup and only opened the smoker door once to change out the drip pan. The results have been fantastic, and I love being able to sleep or run off to work w/out worrying about the smoker.

Welcome to the fun BigTex, as Sarge stated the OBS with the PID would be the best bang for your buck. You could start with the OBS and get to know how the Bradley works then go for the PID if you feel you need one.

I have the DBS 6 rack and love it, I also have a PID but that came after many many great cooks. I just wanted to controll the temp a little better cause I make sausage quite often.
