? on Boudin

I am trying Boudin next.

I have seen raw meat mixture (with milk) stuffed into casing and boiled.
I have sen the meat cooked then mixed and stuffed (Brown and serve)

It mentions not smoking the one with milk.  IS this because of the temp range issues or something else?
Is it possible to use milk powder and water and still smoke?
Also your opinions on which way provides best results and if you have smoked any before.

I really  appreciate your feedback and suggestions.

The Boudin I like is cooked before it is stuffed.

But saying that, that is more of a commerical Boudin so as to not get anyone sick.

Smoked Boudin in the Bradley is Rock n Roll!

Boudin and scramble eggs, green onions, little milk, black pepper, topped with some cheese. Geez!

Even with dry milk i dont think i would smoke it. If you want to smoke boudin omit the milk of any kind and add cure #1. The boudin will still taste the same because of the liver. When i made it i left the liver out because we dont like it.

All depends on what you like and how you want to prepare. Some cook the meat and liver, some dont.

You've mentioned that more than once, that must be some good breakfast, now to go find me some Boudin here in hillbilly land.

I'm pretty sure they have boudain at the Whole Foods in Green Hills.

But I'd have to go past Trader Joe's to get to Whole Paycheck, and that is hard to do!  I went into Whole Paycheck for something the other day, stopped in front of the "Dry Aging" box and just stood there staring.  When I finally got my senses back, I forgot what I had gone in for and just walked out!

That's funny, I fall into that same trance when I stand in front of their seafood department.

I would LOVE to see their meat smoking facility and equipment.  It has got to be huge and first class.  Always smells so good in there when they're bringing out all of the smoked goods.

Never been to SoCal, but I can tell you of one place the family literally had to drag me out!  Well, actually three, but the first one is best BY FAR!!!.  No it isn't Dean and Deluca - haven't had the pleasure yet!     Harrod's Food Court in London.  I was mesmerized!  Never had I seen so much food!  So many cuts of meat, so many different animals to eat.  So many veggies and fruits, so many cooked goods - the bread, the seafood (saw my first Opah among many other fish I had never seen before), and then you came to the dessert sections.  You could have beat me over the head with a baseball bat, and I would not have felt it!  I would have still had a wild smile, and wide open eyes.  I have never seen anything like that - nor since.  One could find lots of new things to smoke there!  

Oh, did I mention the cheeses?

DITTO!  I was there a few years and and just wandered around and around and around..

I read your last post rather quickly and where you mentioned "saw my first Opah" I quickly read it as "saw my first OPRAH" and I started laughing out loud and said to myself "where else would you expect to find an Oprah but in a food court?". :D :D :D :D :D :D :D :D :D :D :D :D :D :D :D

That's funny!!!!  But, that would not have been my first Oprah sighting - she of course, got her start here in Nashville in the 70's!
