When layin the goodies on try to keep them 1/2" from the end then when rollin try to pinch the ends wile rollin and when you get it all rolled up lay on plastic wrap and roll up then pinch the end of the plastic wrap and roll the fattie on the cuttin board wile holdin the plastic. This will twist the ends like a sausage casing. Tuck the ends of the plastic under the fattie and let rest in the fridge to firm up.
