Well I just got to rag here a little. I'm about 10 days away from finishing up the ageing on that 17-18 pound chuck that I will turn into ground beef. [:D] Looking forward to some serious grillin'. Plus I can go back to eating med-rare hamburgers without having to worry about it.

I picked up a really nice sirlon today about 14 pounds. It should be good to cut into steaks around the 30th of the month [^] Everything will be vacuum packed after the grinding/ cutting!! [:D]

I also got today 25 skinless/ boneless chicken breast for 1.79 per pound~~! I don't know where you live but that is a good price here.

Awesome.

I just lucked out and picked up a 20 month old bison. Grain fed, approx 250lbs deboned. For $1.00/lb. Farmer wants out and is getting rid of his stock. No market for them so he is butchering. Wish I could find a chicken farmer that wants out.[:D][:D][:D]

WoW I cannot image no market for bison. I have no idea of the amount of waste there is when butchering but even if it was 50% that is a heck of a deal... Glad for you!

Ever since the border has been closed to beef. Bison market has dropped. Good for me[:D][:D][:D]Bad for them[V][V][V].

Last auction sale I heard Bison three to five your old females selling for two to three hundred. Prime breeding stock if you are into that kind of thing.[:o)][:o)][:o)]

Excellent deal on the bison, CC. I've enjoyed the occasional bison burger at the pub but have never purchased it for home. It's supposed to be very healthy.

Thats WORD to the Raye man...There is a local place hear in COnway that grinds there own meat, they will cook it anyway you want it(as my wife is asking "what are youoooo doing"), it is a bit $$$ but it is a nice treat from time to time.  Medium RARE and a bit of salt, no funky sauces-thank you.

 [:(] I hope they don't ever find a Pi$$ed Pig or Crazy Chicken disease. We'll have to end up just eating the Bradley Bisquetts and snorting smoke.
      I'm a real lover of Beefallo (Jersey Buffalo cross) Meat has better flavor than beef and fat has a pale yellow color. Grills great. Bill

There has been a beefalo farm in my area since the early sixties. During that time I have seen that farm's stock, change from looking almost like buffalo to these strange long horn, long hair cattle. It's funny, I have never eaten any beefalo. There are now two small farms nearby. One of these day's I'm going to make a visit, and ask the owners if they market or just breed. I rarely see more than eight cattle at any given time on either farm.

Today there are so many breeds, that many look like regular cattle and may only be 1/16th buffalo.

Pi$$ed Pig is what you get when you let the scraps sit in the slop pail too long and it ferments[;)]

We did go through chicken problems last year in fact.  Caught Avian Flu in B.C. and destroyed everyhing with feathers for miles around.

When I grew up, one of the neighbours was into exotics.  Buffalo, Llamas, Yaks, can't even remember them all.  He talked about trying beefalo, but I dont think he ever got that far.  I have not heard that term for years now.  It would be interesting to try.

I have been able to go on two "Buffalo hunts" in Oregon. Really its a guy who raises Buffalo and he takes you out on the Ranch and you get to locate and shoot one of his culls(Cow) or a Bull if you want something to hang on the wall. Its really great meat. The first one had 578lbs of hanging meat the second was about 410lbs. I sold half of each before I went. I charged only half of the total (animal,gas,Butcher etc.) First came out to $2.25 a pound when all was said and done the second about $3.00, due to smaller animal and increased cost of animal. I have not bought beef for two years. Its processed just as a beef ie.. Fillets, T-bones, roasts, serloin, ground etc etc. The butcher wanted to add beef fat to the ground and I said NO! I paid for a Buffalo and thats what I want to taste. Now I'm getting hungry, I might have to call the Mrs. and get some T-Bones out. I also got 3 Antelope last September. Has anyone smoked Antelope? Jerky or sausage?

Are you sure they didn't just change breeds? What you are describing sound to me like a Scottish Something Long Hair Breed that is raised on a farm about 45 miles south of here. No ties to the beefalo.

I was talking with my brother today, and he was saying the same thing that he thought they had changed breeds. I am going to have to make it a point to stop by and try to find someone to speak with. Both farms are run by absentee landlords, and trying to find the person who runs either farm is almost impossible. As I stated earlier, I have never seen more then eight cattle at any given time, and they are meadow feed. So there is not much oversight of these farms.
