Elk Jerky

Howdy folks!  A buddy of mine is going to give me a quarter (front? rear?) of Elk...all he wants in return is some Elk Jerky.[:p]

I don't have any recipies for Elk Jerky and I need your help!  Someone out there has to have a brine or seasoning or marinade dontcha?[:D]

Still traveling folks...off to Hartford next week; Houston two weeks after that; Boise two weeks after that...but the ground is thawed and I have a small fence around the front of the house going in on Friday so the little doggies can finally go outside without fear of being fodder for some of the critters up here...10 acres is just to much to let them run free on, so I gotta fence them in.

No elk jerky stuff for me huh?  I'll probably use something from the venison folk, after all, isn't elk the "filet mignon" of deer?[}:)]

i have done alot of jerky any recipe will work , but far as doing jerky in the bs . i would use High Mountain cure , what i have found when doing jerky is if you use your own its a wet brine and it will take 7 hours or more to dry it out and alot of work moving them racks around. when useing High Mountain cure. its a dry cure and set the bs to 200 and let her smoke for 3 hours , move your racks arond once, ( top to bottom - front to back) and after 3 hours turn your smoker off and come back and check after 45min it will be done perfect. http://www.himtnjerky.com/ if you want a good all around brine that i use for salmon and beef jerky.
In a large bowl mix the following:
1/2 cup coarse salt
2 cups demerrera sugar (darkest brown sugar)
1 cup terriaki
2 minced cloves of garlic
1 Tbsp. fresh cracked black pepper
1 Tbsp. cayenne pepper
2 Tbsp. Worcestershire
1 cup apple juice
1 cup water

I may be in Hartford next week--my daughter goes to school just outside Hartford and has track meets on Weds and Sats. Let me know what days you're there--perhaps we can get together for a beer or three.

John, I'll be in Hartford - arriving Sunday evening at 9:30p.m. EST - we've got a company function dinner on Monday night but maybe Tuesday?  I leave on Wednesday afternoon -

Well, here I am in Hartford...John:  that would be cool - I'm out here at least twice a year...my sister lives in Springfield, MA and I was hoping to see her this trip but it's not working out either...next time!

St Paul/Minneapolis; Denver; Atlanta; Salt Lake City.  Typical final desination points are: Hartford; Denver; Houston; Boise...
