Red Beans And Rice

A couple weeks ago Mr pickled some ham.
We made red beans and rice and used some of that ham in it.
It was our first attempt at this dish.
We soaked our red beans overnight, and then chopped up green pepper, onion, and celery.
We also used andouille sausage and some hot sausage.
We added lots of garlic and a couple bay leaves.  We made a Creole seasoning and added that.

All in all, I have to say we were very satisified with this dish.

Sounds great.  Of course, like all Cajun food, everyone has their individual way.  Some things you might consider adding (or not) as you develop your own "best recipe":

     Thyme (1 T)
     Worcestershire sauce (2T)
     Tomato sauce (½ C)
     Green onions (¼ C)
     Parsley (1T)

I usually omit the tomato sauce but included it because I know a lot of people who just have to have it in there.

Sorry for the delayed response - I am not getting on the forum as much as I used to.
I love Worcestershire sauce, and was surprised that this was not an ingredient.
I want to make this again sometime.
