Dangit, Rick!  I just met ya.. already love ya like a brother ---
But, now I gotta go and correct you...
Have you taken leave of your senses?

How could talk about authentic burgoo, and not mention SQUIRREL?   ;D ;D ;D

He did in his Intro and I went ahead and harvested two today for the burgeaux!

I think ronbreau, KyNola, MrsKyNola, Ka Hona and myself could turn this into a cajun thing.

Cajun Burgeaux!

That means you'll have to add both possum and racoon.   ;D
I like animals, they taste good!

Rick, take a listen at this.

Dad has always cooked his pig in the ground overnight. I went to a roast once where they did their pig sorta like you do, but use concrete blocks, you can see their way here http://cuban-christmas.com/pigroast.html.

I had never seen a homemade box like you use, but had seen the commercial ones like in the previous links. We have thought about doing a pig roast at a tailgate for many years, but just never bit the bullet and done one. I think I am going to revisit that idea with the group and see if we cant plan one.  Thanks for the link and thread, it'll come in handy.

It's somehow beautiful how the spewing laugh spittle just glistens in the glare of the single fluorescent fixture as it spreads out across my desk!!
