Bacon - No you Can't Do that

Well maybe you can and maybe you can't. But I DID. ;D

I would have prefered to have made my own bacon but with the heat and wall building going on, I opted for some Hormel Thick sliced Hickory Smoked bacon. Cut in half for this recipe.

I wanted it flat and crispy for this recipe but you could try it less crispy. The broiler provides a more consistent cook and doesn't curl as pan or griddle frying even though I use a cast Iron press. Note, putting bacon onto a cooler surface and allowing it to come up to temperature with the surface slowly will reduce curling.

Next is some of this... Yes you know where I am going now.

Double boiler melt.

After taking the bacon for a nice swim in the semi-sweet dark chocolate, lay them out on a SILPAT.

Give them a light sprinkle of Salt. I used some French Grey Sea Salt.

Now into the fridge to harden the chocolate. Enjoy but..........

What to do with all the left over chocolate??????

Chocolate, smoked almonds would sound good.

Actually very good. I was surprised myself. I have not found a single person that hasn't liked it.
Afterall, everything is better with bacon. I believe they also say everything is better with chocolate.
So how can you go wrong with chocolate covered bacon?
