just made 2 pastramis from corned beef and they are in FTC as we speak. Made them for a get together on this Saturday afternoon.
Should I:
1) slice , vac seal and refridgerate
2) vac seal whole, freeze ,defrost and slice on Saturday
3) slice, vac seal ,freeze, and defrost on Saturday
4) vac seal whole, refridgerate, slice on Saturday

I vote for #4 as well.  Since pastrami is already cured it will be just fine till this weekend.  It also give the flavors time settle down. I have  pastrami wrapped tight in plastic as we speak that I smoked on Sun. and to be sliced later this week.
Is it bad if my wife refers to the smoker as "The Mistress"?

I did one yesterday as well and that is what I did.

I left my vac seal bag a little long so I could cut it open and reuse it to freeze some of the pastrami.

The little piece I snipped off sure did taste good.
