Hi Arnie,
They taste just like regular chicken eggs. Most of my birds free range and the eggs from birds that are able to go out a graze produce an egg with a very orange yolk.
It's because of the beta carotene contained in grass that they eat. Shell color makes no difference believe it or not :)
I need to take some recent pis of my flock...not just their eggs :D
But google "black copper marans" and you will see their coloring.

I still buy mostly brown eggs, knowing that they are more expensive and do not taste different than white. It hearkens back to my Granny. My father was killed in an accident before I was born. Consequently, I spent a lot of time at Granny's house in a small West Texas town while my mother tried to scratch out a living for three small kiddos.

Granny's hen house was in the back near the horse corrals. No one had ever heard the term "free range". Chickens had to fend for themselves in the barnyard. Many an overgrown grasshopper met his demise in that dry, hard packed, red earthed yard. The horses grain bin would give up some sustenance and green winter wheat or young weeds provided other needs.

I remember gathering my brown breakfast eggs out of Granny's hen house every morning from an early age where the chickens were pecking protective and almost as big as me. There was no such thing as a personal relationship with these chickens. The first time I went into that hen house alone was a tough adventure and a good lesson in life. However, nothing tasted better with those homemade biscuits (both sides dipped in bacon fat before baking), slab bacon and a big lump of fresh soft butter and homemade apricot preserves.

Yes, they did have an orange yolk, just as you described.

Every time I crack open a brown egg, fond memories flood back into my mind. Maybe brown eggs do taste better.
