Auburn vs Kentucky 2010 - some butts...

My daughter will be setting up a booth again this weekend at the Auburn/Kentucky.


Same Menu as before:
Sandwiches

Pork Sandwich (with chips and coleslaw)    $ 4.50
Pulled Chicken Sandwich (with chips and coleslaw)    $ 5.50
BBQ Chicken (leg and thigh) (with chips and coleslaw) (Combo w/2 thighs add $.50)    $ 5.00
Smoked & Grilled Bologna (Thick cut w/Cheese) (with chips)    $ 3.50
Smokin' Dogs (with chips)      $ 3.00
Smokin' Brats (with chips)     $ 4.00
Grippo Chips      $ 1.00

Cookie    $ 1.50
Soda Pop    $ 1.50
Tea           $ 1.50

I will be using one of my Bradley smoker's, either my Green Egg or Grill and the Backwoods Party.




I apologize about these first two pictures I had to take them with my cell phone while the Nikon battery was charging.


I purchased 5pkgs - 10 butts total at Sam's at $1.58 pound.


I picked up a few large ones. The last one was a little over 21 pounds.


Applied mustard and rub...


I purchased a Dual PID for my Bradley...


I placed the second probe under the bottom rack of pork.

About 4 hours in I got concerned with the temp's

reading 226f on the PID...


The door was reading around 175f


The PID second probe I placed in the butt on the top and the other in the lower butt.


They were pretty much reading the same.


This first probe is hanging below the lowest rack.


FTC Time. All but the two in the Bradley. They are not going to make the trip.


One down 7 more to go...


I purchased this nice cooler at Sam's and it looks like it will handle all eight butts.


Two more...

That's it for now - I've got to load the truck and trailer. Told my Daughter I would meet her at 3:30 and Game time is 7:30PM.

Do they just let her set up or does she need to get some type of permit,license, health certificate or something?

Hey Gus, I believe what they do is get a temporary food service permit, this allows her to set a pop-up tent for 3 days at a certain location. I know that's how she does it here in our area.

She has to fill out a request and pay sometime like 25 or 35 dollars and then they send someone over to check it out. She has done this down in Lexington 4 times so far and they only came out the first time. They do have requirements that must be met but nothing big.

Got Back around 5:45pm and checked on the two in the Bradley. It had moved from 163f to 171f in about a 4 hour period.

They do look damn good but I'm starting to worry about them.


The bottom butt is 170f and the top 171f.


Closeup of the top butt.

Now at 8:30 the top butt is setting at 173f and the bottom at 171f.

I'm confused!!

It' 11;25 and its been about 27 hours and my IT on the top butt is 178f and on the bottom 181f. Not sure this well even be done by tomorrow morning!!

I started to take them off and put them in the oven hours ago but wanted to see the PID cycle through. Now I'm afraid that these are no longer any good.

Don't throw them Butts away!

They are going to be awesome.

Had one butt that took 30 hrs.
