Cure Smoked Salmon

FINITO!

Just finished the 6 hour smoke.  It looks...well just take a took.



The same I guess, although the smell is amazing.  Tomorrow morning I'll give it a try.

Habanero Smoker

Too bad Kummok wasn't around over the weekend. He has air drying salmon down to a science. He can determine different degrees of the formation of the pellicle, and he only allow his to develop to a certain stage.

Changes:

The smoke I applied was hickory as I did not have enough alder for the 6 hours....this probably one of the changes.  Although it was very good, the smoke is strong.  Those who tried it had it with cream cheese and capers and loved it.  I like it sliced thin all by itself.  Also, I would have left the Salmon out more than 6 hours before I smoked it.
