I need some help!

I'm thinking of making bacon but I have 2 questions in my minds.

Will I be able to do it in my OBS with no cold smoke adaptor?

Second question is for my Canadians friends. Where do you buy your cure #1? It is impossible to find some here in Montreal. Have you ever bought it over the internet? If yes, what website?

Thanks for the help

Hey Kinyo,

I smoked my bacon without the adaptor. I just followed the Habs and 10.5 recipe for maple cured bacon. It is the best. That is what everyone that has it tells me.

I got the cure from Malabar Super Spice in Burligton Ontario.

The cure you will want to purchase is Sure Cure (Order No. 7603) It is a drop in for Instacure#1

Do yourself a favor and put a request for it in an email and tell them why you want it. Wait for a response (it was quick for me) and then call them to place the order and determine shipping costs. Not sure why but they are fussy about starting the process via email.

Kinyo, the bacon I smoked last weekend was on my Traeger.  It bounced around close to 200°, so 'cold smoking' isn't 100% necessary..

Kinyo,
I have never cold smoked bacon.  Smoke it at a smoke/cook temp of 200F until the IT of the slab hits around 152F and remove.  If itsCanadian bacon(pork loin), pull when the IT hits 145F.
