mac and cheese

OK, I need a mac n cheese recipe for my wifes baby shower.  Any suggestions?
Is it bad if my wife refers to the smoker as "The Mistress"?

This is a simple, rich mac and cheese. Nothing fancy about it..just cheesy goodness. Can be cut in half also.

4 cups uncooked elbow macaroni
4 eggs
3 cups evaporated milk
1 stick butter, melted
1 1/2tsp Freshly ground black pepper
Salt to taste
1 tsp Cayenne, or to taste(I use cayenne and Franks)
1 cup sour cream(optional)
diced pre cooked bacon (optional)
32 ounces shredded sharp Cheddar(half smoked works)

Bring water, salt, and oil to boil over high heat Add pasta, bring back to a boil and cook until al dente, 8 to 9 minutes. Drain pasta and rinse with cold water to stop the cooking process.

In a large bowl, mix together eggs, evaporated milk, melted butter and salt and peppers to taste. (add optional items here too) Stir in 3/4 of the cheese and add the pasta. Spray an 9 by 13-inch baking pan with nonstick spray and add the pasta mixture. Top with remaining cheese and dust with paprika.


Bake until the cheese is golden and bubbly, about 45minutes. Serve hot.

Ok this one is our fam fav and easy.  The recipe is to feed four so if you want more then do the math.

2C of macaroni cooked and drained

1/4C of butter or margrine
4TBS of flour (I do 3 TBS of flour + 1 TBS of dried onion flakes)
S & P
2C mlk
2C shredded cheese

1 TBS butter or margarine
1/2C bread crumbs
1/4C shreeded cheese

Over medium heat melt butter in a med. size sauce pan. Stir in flour, onionm S&P mixture until combined. Add milk and raise to a boil while stirring frequently. Continue until the sauce thickens then remove from heat and the 2C of cheddar abd stir to incorporate. Add the noodles and stir to combine.

Pour this mixture in to a 2.5Q cassarole dish.

In a small sauce pan melt the butter, add the crmbs and stir to mix. Remove from heat and stir in the cheese. Spread over the cassarole.

Cover and cook at 350F for 50 min. Remove lid and cook until crumbs are golden.
