Pepper Sticks for my Super Bowl Party

Got several people coming over for a Super Bowl party.

Rolled my work station over near the sink.



Pulled some pork out of the freezer...


Using my Lem Grinder.




Weighed out 1 pound...


Four pounds of beef.


Next, I had mixed my seasoning...


LEM Pepper Stick Seasoning
13 tablespoons of seasoning
1 teaspoon of Cure
8oz water.

Mixed seasoning, cure and water


Next, I replaced the grinder head with my Lem mixer.


Placed the beef and pork into my mixer....


Turned a few times before adding mixture.




All mixed...



Placed into a bowl and to frig for a rest.

Time to start stuffing so I pulled my parts out of the frig.

First, stuffer parts....


Next place the mixture into the stuffer.



Using 19mm collagen casings



Stuffed and ready for the smoker...


Game Plan
130degree for 1 1/2 hours (without smoke)
140degree for 1 hours (with smoke)
150degree for 1 hours (with smoke)
160degree for 1 hours (with smoke)
170degree (without smoke until IT reaches 165)

Here is a picture after 2 hours.

Ten+ hours later.....

Blooming for 2 1/2 hours.



Next into a paper bag for a day in the fridge.


Next morning....




Now to start the jerky!
