Kirby's Cold Smoke Gen Eggs

Had some pellets still in the cold smoke generator so i decided to use em on some eggs.

First i steamed the eggs. Steaming makes for a clean yolk. No gray around it like you get from broiling the egg.


While the eggs were steaming i made the pickle brine.

Here you can see the egg yolk after steaming.



I used the remainder of the pellets for about 23 mins of smoke on the peeled eggs.



After the smoke and the brine cooled i rinsed the eggs and used a fork to gently puncture the egg into the yolk, top.bottom and sides. This will let the pickle brine get to the yolk. I also added pickle spice, sugar, salt, jalapeno and some red pepper.

Put the jars in a bowl or cookie sheet so you can over fill the jar.

Oh my god. My mouth is watering. I love pickled eggs.

They look real good Rick, now I don't do this but my youngest son puts habaneros in his pickled eggs.. to darn hot for me...

Yeah i know.

Growing up with mexican food i learned long ago that you need just a bit of heat but not so much as you cant taste the food.

I just got that same steamer Nepas. How many minutes do you use for the eggs?

I found 18 mins is just right.

I made another batch this morning for the smokeout.

The gray/green around the yolk is from over cooking, not the method.  I regularly boil eggs to hard cook them and never have a problem with discoloration.  Time depends on size of egg.

With the fork holes the pickle liquid soaks right in.

So Rick the eggs could be eaten after one day in the brine and you dont have to wait for weeks? I was wondering if you would be willing to part with the brine recipe.
