Anybody have a quick and easy slaw recipe, perferrably a spicey variety?  I'd like to just use one of the store bought bags and then make my own liquid mixture, since I am going to be traveling and won't have the conveniences of home to do all the chopping and such.

Thanks!

Here are two I use with links for more info...

cowgirl's Chipotle cole slaw

     1/2 cup mayo
1 chipotle pepper in adobo sauce (minced) you can add more
     minced onion
     salt to taste
     a squeeze of lime juice

Ugly Dog slaw

     1/4 cup mayonnaise
     1 tablespoon garlic pepper seasoning
     3/4 teaspoon garlic powder
     1 teaspoon black pepper
     2 tablespoons soy sauce
     1 tablespoon + 1 teaspoon molasses
3 cups red cabbage, very coarsely chopped, or green cabbage (or both)

This one is pretty good.

KFC Coleslaw recipe from a "Top Secret" cookbook.

2 12 oz bags Dole shredded cabage
2 Tbl minced onions (I use reconstituted Penzeys white dehydrated onions)
1/3 cup sugar
1/2 tea table salt
1/8 tea black pepper (I use 1/4 tea)
1/4 cup milk (I use skim milk)
1/2 cup mayonnaise (I use miracle whip light)
1/4 cup butter milk (I use low fat)
1 1/2 Tbl white vinegar
2 1/2 Tbl lemon juice
I also add 1 tea celery seed

Mix all together, slap on a lid and throw in the fridge overnight.

It will seam like there aint enough wet stuff in there but in the morning there will be.

Stir a couple times before serving and enjoy.

The following link contains a good cole slaw recipe. But cut the mayo down to 1 cup, and the sugar down to 1/2 cup. Make it a day or two ahead of time, and drain off the dressing just before serving.

I really like Corkys slaw. At first I was hesitant about the celery seeds but after I tried them I really liked them.
I didn't use the onions as my stomach doesn't like them......

Like a lot of things, I think the slaw is better the 2nd day!!

This is the one we like with pulled pork, no mayo.  I mix in a jar.

1 cup cider vinegar
1 cup sugar
2 tsp canola oil
1/4c finely chopped onion
1/4c finely diced bell pepper(any color) we also add 1 finely diced jalapeno
1/4 tsp celery seed
1/4 tsp minced garlic
salt/ pepper to taste

Shake well and pour over cole slaw mix.  This makes enough for 2 bags.

I'll second third Habs. I also follow Habs adjusted amounts of Mayo & Sugar. We use the pre-shredded cabbage and carrots in a bag and it works excellent.

Ok...we go all weird on slaw...we make basic slaw and add beets (yes beets) and peas...it turns the slaw a nice color and adds sugar that you don't need in the dressing...I know...we're odd!!!  ::)
