Back In The Saddle Again ........... 30 lbs of Summer Sausage

Summer Sausage and Smoked Cheese never seem to stay long.

Seems like you have some, then POOF, it's gone.

Used Hi-Mountain and Lem Backwoods Summer Sausage seasoning.

50% venison, 30% ground chuck, 20% fat (the chuck was very lean)

Backwood Seasoning



Getting mixed up.



Smoked 3 alarm cheese to 10 lbs of it.



Mixed yesterday and let it rest in the fridge over nite.





Into the Smoker about 12 (noon)

That cheese is some gooood stuff and in that sausage it will be perfect.
