Beef Jerky Sticks

I decided to try out my new jerky gun for the first time. I got  4 lbs of 80/20 ground beef. And I used the Backwoods seasoning that came with the LEM jerky gun. I only used 3/4 of the packet due to others complaining using the entire packet turned out to be way too salty. But I did add all of the cure #1. The gun worked well and was easy to use & clean.

I made some flats and rounds using the two different provided tips. Put them in the OBS with 1 1/2 hours of Apple smoke and convection fan on. The temp started at 170F for a half hour then I dropped it to 155F and slowly progressed the temp up until it was at 170F. They took about 7 hours to dry. They tasted very good but could have used just slightly less seasoning ;D

The Backwoods Hot is allot better than the orignal,,,, IMHO.

CRG...I just tried some more and they taste even better now. The smoke is mellowing out now and it has a much more rounded flavor. Thanks for everyone's advice. If I would have use that entire packet like the Backwoods  label recommends it would have been way too salty. Using just over half with 4 lbs of ground was perfect! And good call by Nepas for using the 80/20 ground since the packet calls for extra lean ::)

When using the Backwoods Hot I use the package that does a 10 lb batch and use the whole package and its not to salty for us.

I did find the original to be to salty.

And like most things that are smoked they will taste better 24 hr later. I wait 48 hr on SS and Salami before cutting up.
