Cali-Caprese Char Siu Chicken Club Stacker

I used some smoked chicken for this, but rotisserie works fine. (we had these 3 nights in a row last week)

Bottom up..

1/2 Baguette, chipotle mayo, Char Siu chicken from the other day, smoked bacon, fresh garden tomatoes, mozz cheese, fresh basil and a chopped Cali avocado.



Warm the bread and slap some mayo down.  Layer on the hot chicken/bacon.   Add tomato and mozz cheese and put under the broiler for about 90 seconds.   Pull and top with basil and chopped avocado.

Quite tasty!

Got a cast iron skillet and brick you can wrap in foil?  Instant smasher!

Got a cast iron skillet and brick you can wrap in foil?  Instant smasher!

I HAD some cast iron skillets even an griddle till I got married and mama started usin them.  ;)

4 fire bricks (and some fresh foil) work pretty good as well.
