Just keep in mind that about half of that animal will end up as some really expensive hamburger.  ;D

If I'm wielding the knife, most of it would end up that way.    :o
I'll stick with the special-occasion-mail-order variety.

I've got one of those tri-tips thawing in the fridge now..

I raise a few beef cattle every year so I started looking around for live animals and found this.
A pair of Waygu cattle for sale on one site was over $10,000 for the pair  :o

So are Waygu Cattle a Japanese breed where Kobe beef comes from? From what I understand true Kobe beef cattle never leave Japan...

I'm not sure, there are a lot web sites and it seems like in the US it is all waygu.
I guessing that waygu is a breed of cattle like angus and hereford but is Kobe when raised in the Kobe region of Japan.
Maybe it's like sweet onions, they are only Valdelia onions when raised in a region of Georgia.

Yep.  They call it American Wagyu.

I am interested to see what you think of the new drip pan. Very interested in how those kobe hot dogs taste :)

Right now I'm a pretty "low-end" meat seller  ;D ;D
I have to sell them live on-the-hoof because I would have to get USDA inspected to sell them as cuts of meat.

We have some Berkshire pig farms around us..   Same thing - "on the hoof" cash sales only.   And I'd have to cart the poor thing to the processor.   :(

I can tell you how those Kobe hot dogs taste.  They are awesome.  I ordered some a little while ago along with a few other things.  The hot dogs and the burgers are delicious.  The hot dogs have a distinct smoke flavor to them.
