New smoker

Good morning from New Mexico my name is Matt and this is my first smoker. I have a DSB and am gonna give it a try this afternoon on some cut chicken half's.

Remember, cook to temp and not by time. Don't sweat the temp swings. I would say IMHO, a dual probe thermometer like the Maverick et732 is a must have.

The chicken came out just great. cooked it to 270IT and then put it on the hot grill for just a couple of minutes. Next is some ranch beef I got last week. Thank you all for the warm welcome.

Yeah thats what I thought too. Me thinks this is a mistake. 170f sounds more like it.
