Husker Game Brisket

Well, going to go all night with my brisket for the Husker game tomorrow night.

Going to fire things up around midnight tonight, 4 hours hickory, 225*, and let it ride!

Both Sides Seasoned, what's the slit there for?

That big ol hunk of beef is gonna be gooooooood!

The slit is were they removed a layer of fat that separates the point from the flat.

I would love to see the results as well. I attempted my 3rd brisket this weekend and it finally turned out great. I had to use the Texas Crutch this time, but it worked. Pulled the brisket at 185 degrees. GBR!!!
