Thanks for the Thanksgiving wishes.  No smoking for me this weekend.  Doing lobster thermidor on Monday instead.  Still waiting for my new Big Easy SRG to show up.  I'm tracking it on Fedex. com.  It left Atlanta on Wednesday morning.

Thanks folks. I got a turkey thawing to go into the Big Easy after it gets 1 1/2 hrs of smoke. Just the four of us and maybe one of the youngests friends. Not doing a full blown dinner. Just turkey, brussel sprouts, potatoes, homemade cranberry sauce (whole berry and jellied which I made yesterday) and carrots. I will probably just eat turkey, cranbery and mayo sandwiches. Oh yeah and I am making sweet potato pie but I am using Yams instead.
I like to walk threw life on the path of least resistance. But sometimes the path needs a good kick in the ass.

Thanks everyone, I think I will head over to Q's for some turkey sandwitches.
Just the wife and myself so we are spending the weekend inthe big city going
to different blues and jazz clubs, saw Jim Byrnes tonight. trying to figure out
were to go tomorrow night.

We did a 22 lber for 10 people with cold smoked spring salmon for appies. Yesterday was my bday so I went out coho fishing-- we caught 7 coho, kept 4--biggest 13 lbs. Great birthday/Thanksgiving weekend so far! Hope everyone is having a good one

Ok so lets start with making Sweet potato pie lastnight.
Here is the...ok confession #1 I use Yams cause they are sweeter.

add the eggs milk cinnimon nutmeg,

oh and don't forget the Rum. I used Spiced.

Confession #2 I used bought crust. This year it is all about simplicity. The less I have to do the better.


Two awesome pies out of the oven, damn it will be hard to wait.



Know on to the torture for Sonny. 12 lb turkey, stuffed and ready for the oven.


The leftover stuffing gets bake when the turkey comes out.
It has smoked oysters, cashews,mushrooms,onion, bread crumbs and spices.

Brussel sprouts all ready to cook, cheese sauce to go with them.

Precut carrots cheat.

Premade mashed potatoes, cheat but we really love these.

Store bought rolls,cheat.

Apples for apple salad, it's a family tradtion.

Store bought Apple pie, cheat. But like I said it is all about having to do as little work as possible. Pics of the cooked pidgeon to follow.

Nice spread you got going there!  Shortcuts make a happy cook instead of an exhausted one..nothing wrong there!
