Dinner: Leftovers Again

Sunday's ribs come into play here.  Not everything is left over.

Got some russet taters, onion and a bit of garlic browning up in the trusty, rusty 12" cast iron skillet.



Reheated the ribs in the oven in foil for a short while.  Cut up an avocado, plum tomatoes and some kind of green stuff the wife found in the freezer - not sure if it came that way or grew.  The tater sauce (not shown) was ketchup, Sriracha and garlic.  Not bad for a weekday.

I think a part of it is the cast iron pan as ghost gently hinted.  That's a 12" on the stove.

Cook sliced/cubed taters for 20 or so minutes on medium (patience grasshopper) until starting to get golden.  Then, throw in the onions until lightly cooked.

I was gonna use a 12" non-stick pan.  My ankle is beginning to heal (wifey again).  Honestly, nothing cooks quite like cast iron and a well seasoned pan cleans up almost as easily as non-stick.

Now it's off for a coupla chocolate chip/jalapeno cookies with a glass of wine for desert.

Sometimes life is good.

Lasted till 10:00 then I had to have a pork chop in a can.  ;)
