Hello all,

Haven't had a whole lot of time to do smoking and dehydrating but I was bound and determined to do something this weekend.  So I decided to give nuggets a try.

A couple pounds of beef, sauce and cure -



Ready to go into the fridge for a couple hours -



Should be able to get it into the dehydrator tonight and done by tomorrow morning.

I need to re-try this.

The one time I made these I feel asleep at the end of the dry time and when

I woke up I had muebe's rocks instead of nuggets.

Well, checked them this morning and they were pinkish red in the middle so it looks like it will be a few more hours.

If you get 'em to turn out just right, LOOK OUT!  They are highly addictive.  (Might be time for a ride down to Sam's Club and pick up a couple of whole sirloins  8). )

Well. 18 hours later and I think I cut the pieces to big.  The nuggets -



A quick slice.  Parts of the middle are still brown well done.  Like the cure didn't get to the middle and it sure is taking a long time -



Tastes good.

The original cuts were 1" cubes.  Like I said I think they were a bit too big.  I think they would also taste better if I let them set overnight.

Any suggestions on if I'm right or other recommendations?

Yeah Jim... you might want to cut them a bit smaller. They still look really good though ;D

Well, round two failed, just not as bad.

I went with 1/2 in pieces and cured over night.  Went into the dehydrator.  Now I have puppy training pieces.  Ediable but about the size of a peanut M&M.  They are tasty.

Next time some where inbetween.

Well if they are mistakes, they look like good enough to eat mistakes...lol.. :D
You will make the best muebe nuggets next time....
