After my epic failure at making sausage I was pretty bummed out.  Decided it was time to get back in the saddle so tonight I grabbed a pork belly and a 3 pound section of trimmed pork loin out of the freezer for bacon.  Also grabbed a 3 pound bag of pistachios to make some Blazin' Pistachios.

Time to roll smoke. 8)

Well those ingredients should work well for your morale.  ;D

making bacon - making bacon - somebody is always making bacon!  Until I can get my first belly I am thinking about a moratorium on making bacon.  My hope is that Restaurant Depot will have them, but the stupid contractor is slow - now they are opening in January supposedly.  Or I did find this meat slaughter house out in the country that might same me some when they slaughter hogs.  I asked when - he shrugged

Do you have a Publix? The meat manager in ours will order pork bellies for me (make sure you ask for boneless!)

KYNola after all the great posts and meats you have made and posted and all i've read on your meat. I can't believe it even affected you. Keep up the good work and leave the worrying to the newbies.
