Just wanted to say hi I just got my Bradley six rack digital smoker for Christmas. I've found a lot of usefull information on the forum so I decided to join. I'm looking forward to the years of knowledge found here.

Just pulled out my first smoke cheddar cheese, smoked for 2 hours with apple, with a max temp of 77*F. Can't wait for the 4 weeks to pass. Hopefully I will smoke some jerky this weekend
