Coleslaw with Spinach - Great with pulled pork

SPINACH COLESLAW

This was a big hit this summer at some of the feeds I put on for friends.
1/2 cup mayonnaise - 1/2 cup canola oil - 1/2 cup white wine vinegar - 1/4 cup sugar - 1 1/2 teaspoon dry mustard - 1 teaspoon kosher salt - 1/2 teaspoon cayenne pepper.

1 pound cabbage, shredded - 1/2 pound red cabbage, shredded - 2 large carrots, shredded - 1 green bell pepper, diced - 6 ounces (one bunch) spinach sliced.
______________________________________________________________________

Mix all the dressing ingredients in a medium size bowl.
Toss salad in a large bowl to mix it up.
Add dressing to salad mix while tossing being careful not to add to much dressing. You will probably end up with some dressing left over.
Pop it in the refer for an hour to blend flavors and cool down.
Serve it on the side or toss some on a bun with your pulled pork and PIG OUT![:p]

im wondering what it would be like with peanut oil and splenda instead of canola and sugar...
