Over load on stixs

Normally I only do 5 pound batches in the OBS.  Since installing the fan kit I wanted to see if the OBS can handle a 10 pound load. 

Used 2 tsp of cure #1 mixed in 1 cup of water.  Then added the salt and dissolved it.  Then in went 2 oz of non fat powdered milk.  Got that all wet and happy.  Then added the black pepper, granulated garlic, chili powder, paprika, cayenne, sugar, crushed red pepper, hot sauce and mixed it all up. Followed Greg's spicy stix recipe however I have tweaked it with measurements for my liking).  Got the ECA on stand-by to mix in after mixing the meat.

Stuff a long rope and cut at 37 inches.  Repeat until all stuffed.  37 inches will drape over my bell rods and not touch the V-Tray.  No tying with strings just cut and go.

I used short stixs in the middle to let the fan have some room to push the air around.  Tis a big load and I don't have any idea how this will turn out.  Cabinet is having a hard time coming up to 130 to dry but it will get there.  Will keep you all posted.

Good looking sticks Sailor. I'm sure it will handle it no problem.
Question, what kind of casings are you using? They look very shiny

Very nice. Do you have the 4 or 6 rack?  I want to make some and I believe that this the second time I've seen you post something about the 37". Thanks.

I have the 4 rack.  I cut some 1X to fit on the top shelf which puts the Bell Bar a few inches from the top of the cabinet.  This gives me a bit more room to hang stix a chubs.  With lots of trial and error I have figured out that I can cut a length 37 inches and it will hang over the bar and not touch the V-Tray.  On the chubs I am able to shorten the string loop and they hang with out hitting the V-tray.  I stuff them to 18 inches and they fit fine.

Lately I noted that some of the readers have posted that they had to remove the v-tray so was just trying to give a few pointers ;D

Sailor, it looks like you have the same stuffer I do, with the nylon gears.  I'm wondering where you got that stuffer tube.  I recently bought a 7/16 tube, but the design is different than what you have.  I was warned that the nylon gears could be a problem.  They were fine but the piston broke about 3 pounds into a 10 pound snack stick project.  Had to make an emergency run to the store to get a jerky gun to finish up.

I think I bought the tube from LEM.  The LEM stuffer is the same as the Grizzly cept for the gears.  I have not had a problem with my gears however I am pretty careful and don't put too much pressure on them when I stuff.

Took this when the smoke started to roll.  Fan is really blowing the smoke to the front causing a smoke hurricane  ;D


They are finished.  Took 9 hours from the time I put them in to an IT of 151.  Laid them in the tub to bloom and now they are in the fridge for overnight.  Will cut and vac seal them in the morning.  I will do this again for sure.  I am impressed at how even my temps were at the top and bottom of the cabinet and how fast 10 pounds finished up.  I have had  5 pounds take 12 or more hours.

Those look outstanding Sailor! Very nice color.
I have that same stuffer with the nylon gears and I haven't had any problems with it either.
I also have that tube that I got from LEM, I haven't had a chance to use it, and it doesn't look like I ever will now that I have a Kirby Cannon.

So there was no problem with the bottom of the sticks getting hotter than the top? I want to do the fan mod soon to my Bradley.
