What Did I do Wrong

I am sure that I recorded the weight right. I weighed it 2 times since I was splitting the batch to make 2 different sausages. I may have calculated the ingredients wrong but I don't think so since the sausage tasted great before it was smoked.

I am inclined to agree with rajzer. The sausage was great before it was smoked and the only thing I did different than the last time was use some birch pucks. I know that Birch will rot if you leave the bark on it  and that will happen fairly quickly. I go through a lot of birch for firewood and know that it needs to be split before stacking. Even the small diameter ones will start to get punky after year if the bark is left on. If it is split it dries out very nice and solid. That is the stuff I made the pucks from.

First I ever heard of birch for smoking. Could definitely be the problem.
