Got me some Bacon Curing...

I thought I do a variation on my "Project Jalapeno".  After I applied the cure, then a good dusting of dehydrated pulverized Jalapeno and let it set in the fridge for a couple of days .  I usually put some fresh, food processor chopped up Jalapenos in the bag for the rest of the three ride.  Instead of all Jalapenos I mixed some Sopranos in with them... I'll let you folks now how it goes.

Anyone have any other pepper sugestion???

MW, do you mean Serranos?

And how about some Dried Ancho to add some sweetpepper earthy flavor?  You can either poweder them like the dried jalepeno or use the pods and hydrate then puree and drizzle?

You got to be kidding, you are so right.  The Google spell checker caught it but I must of clicked on the wrong suggestion.

Is Ancho dried Poblano.  Dang that is my favorite pepper. Clean them, stuff them with super sharp white cheddar and a few tiny small shrimp, wrap with bacon then so the goodness doesn't come out then grill those puppies....

I really like the flavor of Jalapeno but not the heat, that is what I am aiming for with my experiments.

Ancho and Pablano are at time the exact same.  The Ancho (http://www.penzeys.com/cgi-bin/penzeys/p-penzeysancho.html) is a pod I used to use and still a lot.  The Pablano is a California like version that is even milder and more like a mild Bell Pepper than a Chile pepper.  

The Ancho I like due to the size and color.  

The Ancho may be the mature redder Pablano which is more Green and early.  At least I think...

We call the red pods I use New Mexico Pods, Hatch or Chimayo Pods.

Sorry man, doing the loin thing again.  I'll smoke to 160 or so so I slice and eat it.  Well I guess it may not be really bacon at that point but close enough for me.  Hay I will PM you later, the wife and I will be coming to the north country, got a couple of questions for you.

Pablanos can be mild but do not taste like bells to me.  I love'm, my favorite is still jack filled Chile rellenos, deep fried with a thin batter. Darn that would get a Baptist to speak in tongues.

Have you tried a little of Pulled Pork & MJack in the chile Rellenos?  Those are real good.

Even better when you pull the pork and mix it in a little of either Chipotle Powder or Red chili Pepper Powder (New Mexico or Ancho powder), just a little dust with the Jack and all.  Ends up a lot like a Tamale Relleno.  Its good.

I am seriously going thinking of making a order with Penzey's for that Ancho powder, that price seems reasonable.  Also anything with Pablano can't be bad.  I am always thinking on someting to stuff them with, just so it starts with cheese.
