Hi from New Zealand

Hi guys

Been smoking now for a couple of month, I'm hooked (and no, not the nicotine type ;D), posted a few pics etc on the Bradley Facebook page (under Matt East) but thought I'd come in here to find peoples secrets etc, so far have smoked plenty of fish including Salmon, a personal favorite, did a 4kg scotch fillet which was excellent, plenty of jerky (I finish in dehydrator), sausage and most recently 2kg of Cheddar cheese, haven't tried it yet, leave it for as long as possible some say....this weekend I'll likely crack!
Anyway, from the South Island of New Zealand, but reside in Auckland now (largest city), love heading up North for the stella fishing, and head down south for the hunting...if we catch and kill it, it now likely ends up in the Bradley at some point.
My weapon of choice is the four rack digital smoker with the extra racks and the Bradley digital temp probe.
Look forward to learning (and hopefully contributing)
