Chicken/Turkey Bacon

I was talking to my sister about the venison bacon I was going to make. And she asked about chicken/turkey bacon. I said I figured it would be the same. But after searching the site I see no approved and tested recipes. I did see where Hab had suggested making it like his turkey pastrami I believe it was. But was thinking with the ground bacon You could debone and grind it and use as the venison. Maybe use dark and white meat. Not sure if the spices or additions would be better changed because of the poultry taste.Also seems a person may want to add fat. So figured Id check and see if there are any fantastic secret recipes out there?

Use the the dark meat and the skin as the added fat.

Freeze the skin then grind and add back to the poultry

Works for me,,,,,,,but Im probally wrong  ;D

I think I have a post some where around here about adding the skin for the fat ya need

What about the dark meat! It acts as fat? I thought the skin might. So basically you debone and grind it all up then? And only add the skin extra. No other fat ?

When making sausage outta chickin I use the dark meat

Then add the skin for the needed fat

A farmer introduces a turkey and a pig, he sets up a blind date with them, they get to know each other and they mate,,, the turkey lays eggs and when the eggs hatch a purkey is born, when the purkey gets big enough it is taken to slaughter, thus turkey bacon is born.

Me too! But Devo made me laugh! LOL! Well been reading and the fat value in, white and dark is approx. 2.5 times more in the dark meat.                        Do you mix another sort of meat or just pure turkey? Wouldnt have a recipe around would you?

Also what about a chicken or turkey boulder? Think that would work?
