Well it was 90F outside so a perfect time to cold smoke cheese  :o

Blocks of cheese. One has Ghost Peppers in it...

Cut into smaller blocks for smoking...

Loaded the Bradley cabinet with two ice bowls. Started out at 90F and after a few minutes it dropped to 68F...

Loaded into the Bradley. Six pucks of Applewood(2 hours smoke)...

After smoking they were wiped down before packing. Looks like some sugar made it's way into the smoker too...

All vac sealed and into the back of the fridge. See ya in a couple months my beauties :)

Natural Gas 4 burner stainless RED with auto-clean
2 TBEs(1 natural gas & 1 LP gas)

Bacon is the Crack Cocaine of the Food World.

Be careful about calling yourself and EXPERT! An ex is a has-been, and a spurt is a drip under pressure!

You better label that sugar package before the DEA pays a visit!

I picked up some salt on clearance (why do they think salt gets old??)...  Need to smoke that up maybe next weekend.

You know after I vac sealed it I noticed it looked like a package for a hungry drug runner :o

That is actually a care package for a friend hence the sugar vac sealed with the cheese ;)

Some beauty technique shown here folks.  I am impressed and inspired.
If you have it - smoke it.

devo

Don't think I have to worry about the ICE in the smoker trick  ::)

JZ

Cheese looks real good.

I'm in the same shoes as Devo ..... don't need ice in the smoker since it is -6C here. But if I did need a bowl of ice I would just put water in the bowl and leave it outside overnight. ::)
