Duck Sausage

I was fortunate enough to get in on a fantastic duck hunt on Tuesday.  I brought some of the venison sausage I made last weekend and everyone loved it so, long story short, I need a good duck sausage recipe.

Anybody got a good recipe for some duck sausage?

I can't even say the words "duck sausage" without grinning and thinking about one of my favorite hunting jokes.

Any help is appreciated here.

Inquiring minds want to know - what is the hunting joke?

One day a guy I know started laughing to himself.  We asked him, "What's so funny?" He said, "I remembered a joke." So we asked him, "What's the joke?"  He replied, "Ah, it's never funny the second time," and wouldn't tell us the joke.  Don't be like that guy!

Easy just use one of these smoked ground venison recipes like posted in my thread. Would be good for any wild meat or burger.

consider mixing your duck meat with equal parts of venison and pork. Then make your normal summer sausage or drop me a note and I will send you one. I think our summer sausage will work well.

So regarding the joke, my buddy would use this in the bar during hunting trips way back in the day while trying to pick up girls.  We would always look like out of towners / hunters wearing duck camo, pheasant gear, etc.  It definitely had mixed results:

My Buddy says, "Hey, you ever had any duck sausage?"
Girl says, "No."
My Buddy says, "Well why don't you duck down and get you some..."

Hope this doesn't offend anyone, just a joke.  Thinking about it makes me smile every time...
