Sausages Day!

Been a while all! Glad to be up and around. So today I decided to work this 21 lbs of fresh pork up my Buddy drought over. And I had 20 lbs of venison unthawing. Well spend over 6 hours making up venison Sausage today. Mixed pork and venison in a 50/50 mix. Ended up with 42 lbs of ground meat. Separated in 10 lb batches.
Rough ground for my  meat for the Hot Italian Venison fresh sausage. Made 10 lbs into patties.
Ground my Kielbasi up fine and added spices and its mingling in the refrigerator for emulsifying tomorrow. Then I'll stuff into casings add some smoke and cook and freeze.
Also Ground another 10 lbs fine for my Venison trail sticks(slim Jim's) Its all mixed and ready to stuff, smoke and finish.
Of coarse I had to take 10 lbs for skinless Venison Hot dogs. This will be emulsified till smooth like a hot dog or bologna. Stuffed into Cellulose casings and peeled before freezing.
Had about 2 lbs of pork left over. So i mixed it into Some Fresh Sage Breakfast sausage.
Another busy day tomorrow! We cooked up some breakfast and italian tonight for supper and to test. Italian is out standing! Wife says a little too hot! But great flavor. The breakfast sausage was really good. But bland after eating the Italian.  Got to get finish got 30 lbs more pork on the way. And a lot more venison.
Sorry no pics. I did this myself and believe me I was worn out when done.  I'lll get out the Kirby mixer tomorrow and finish this.Cant wait to use my brand new Kirby cannon!

Going to have to give me a break. I wanted to get them. All i have is a phone and i tackled to much for me right now. I used my new Kirby Cannon and it works fantastic. But decided to leave the italian and kilbasi bulk. Will smoke some tomorrow and try to gets some pics. About 15the bours in this project all ready. But doing it all by my self. But so far so good.

Would love to see some video of the  Kirby Cannon in action if you ever get a chance.

Yes it does! Sorry I took so long to respond as I crashed because of my back and some other issues. :-\ But managed a pic of my snack sticks and a few of the old fashion wieners.
This is the bowel of snack sticks before packaging. After eating our fill!



and this is a sample of the Hot dogs or wieners.  Wanted the old thick style. With plenty of meat in the bun ;) Some I smoked some i didn't if their a gray color they were poached. That way my wife and friend can pick what they like.



Buddy showed up today again! 40 lbs of venison and 30+ lbs of pork. I asked what am i to do with this. He said what ever you want. So I froze in 5 lb  packages except for a couple lbs of each. to make more breakfast sausage. And I froze all the rest. Figure 1 5lb bag of venison to 1 5 lb bag of pork every once in a while. So instead of freezing it all and the sausage getting old. Well have fresh sausage instead. My Kirby mixer and cannon worked great! That part now is so easy. But way to much standing this time for the back! ::)
Oh and the Kielbasa and the Italian I wanted to stuff. But wife won out. Besides I couldn't stand no longer. And I ran out of the casings i wanted to stuff. But don't tell her! So I have these 1 and two lb bags I use for freezing my fresh sausage and I shot it into those. Never stuffed that much so quick. and to do it on my own was easy and something impossible to do before. Kirby you were right again! With that cleaning tip and the rod it was so easy to clean. Even easier then my old fashion 5 lb stuffer! ;D

Thanks all! It really does taste good. but I m lacking in looks this time. The trail sticks are fine and are really good. Next time i'll cut the pepper back in the Italian so the wife can eat it too! LOL! I guess 1 tsp. of cayenne and 2 TBS to 10 lbs is a little much for her. Problem is I taste the meat raw and she refuses. But how can any one create or cook with out tasting? And whats hot to here is something I cant even feel. Kind of an insult to the pepper to me! And I respect my heat. Did get a lot of request to see the mixer and the stuffer in action. Next time my wife will take the pics or videos with my phone while i work. But it wont be 40 lbs that time. LOL!
