ditto - making jerky is easy in the summer for me because it takes a fraction of the time it does in winter.  However, salmon is easy in winter, and this year I'm going to enjoy cold smoking lox.  :)

Sabor, I know what you mean! I know it's hotter in texas, but 90+ is no joke.
