If you are applying the smoke using the Bradley, it is preferable to place the turkey directly on the rack. You can place a pan on the rack position below the turkey to save some cleanup time. When you move it to the kitchen oven, use a roasting pan with a rack for best roasting.
One word of caution. If you are cooking the turkey in the smoker for any length of time, be careful when you move it from the smoker to the pan. The cavity can fill with juices, and if you tilt the turkey those hot juices will spell on your deck and feet.
