Easy Dry Cure Buckboard Bacon!

Made some buckboard bacon using Pork butt and Habenero Smokers Dry cure from his Canadian Bacon recipe. Worked great!  The only difference is I added 1 teaspoon black pepper per pound, and cooked the bacon at 150 Deg F until I got a Internal Temp of 130. I also ground some cracked pepper at sprinkled it on top!

Looks good, but I have dumb question.  How did you get pork butt to lay flat like that? 

Looks more like a pork belly than a butt.

I took a pork butt and cut it in half horizontally. The slab in the picture is the top half of the butt with the fat cap. It makes the "prettiest" slab.  The bottom half is a little "homelier"  but is less fatty.The bottom half looks more like what you would expect buckboard bacon to look like.

That looks mighty yummy!  Might have to get myself another Butt while they're on sale this week.
