Ky, it's never too early to start practicing.  Brisket may not be a favorite there in pork land, but it's worth a shot.  I'd suggest you try one out every couple of weeks or so.  Then, cut off a pound and send it to me.  I'll give you a fair and honest opinion on how you're doing, after I've eaten it.  This might take a while so keep trying!  ;D
