Hi everyone,
Decided to make some venison burgers from the 3 doe we got this past fall and they turned out fantastic. I'm using a derivative of a recipe I found online(youhavetocookitright is the site if I'm not mistaken) so I'm giving credit where credit is due, however I did modify the recipe more to my liking and wanted to pass it along. I can't see doing venison burgers any other way but I'm open to suggestions!

These stayed surprisingly juicy for being deer meat!
1.5 pound ground venison
2 tablespoons minced garlic(I used the pre-minced stuff but can mince your own)
Fine chop 1/4 cup of red onion
1/4 cup bread crumbs
1 egg
2 tablespoons worchestershire sauce
1 teaspoon salt
1 teaspoon rubbed sage
1 teaspoon dried thyme
Black pepper to taste
Beat egg, add worster to bowl and mix well
Pour over venison and mix it in
Next add breadcrumbs and mix well
Add garlic & onion, mix well
Now add spices and mix well...again.
The secret is to mix the ingredients separately to ensure they're spread throughout the venison so you don't get clumps of flavour.
I hand form and press the burgers and cook on the bbq with a mesquite pouch, about 4-5 minutes a side on medium heat.
Enjoy!
