Caraway-Beer Mustard

Seems my fridge is half full of different mustards I've bought.  I have a batch of Kielbasa in the smoker right now so figured I'd give a shot at making my own small batch of mustard to go with it.  This recipe is from Ruhlman's book and easy to make.  It's a bit sweet but has a nice taste.

2 Tablespoons dry mustard
6 Tablespoons beer
1 1/2 teaspoons Worchestershore sauce
1 Tablespoon caraway seeds; toasted and ground
6 Tablespoons malt vinegar
2 Tablespoons honey
1/2 teaspoon kosher salt
3 large egg yolks
1/2 teaspoon sugar

Combine all ingredients in a metal bowl or top of a double boiler (I used a metal bowl over a pot of water).  Stir continuously until thickened.  Refrigerate covered until cooled.

It's just a little sweet for me but it tastes very nice, now I'm just waiting for the Kielbasa to finish smoking and it'll be a good Sunday eating.

Sounds good, I do love trying new-to-me mustards as well.
