HI, i have a big load of cheese strings to smoke (about 80) but after smoking, how would you pack it? The original packing doesn't seems to be conventional vac-seal. That is why I'm asking. Thanks

The last batch of string cheese I did was vac sealed in 3 mill bags. (More flexable than the 4 mill ones).
I pulled them from the smoker and let them rest in the fridge overnight covered with a towel so they wouldn't condensate.
The next day I sealed them up 3 to a bag separated so they didn't touch each other.
Worked out great.

That is what i thought, thank you.

I do what iceman does but only use regular food saver bags. Just remember to let sit about 1 month. Tried testing after 3 weeks and still no good. Seems like the longer they sat the better.

My only question is after 1 month, will it still be pullable?
