smoked pork belly

I've made lots of bacon but this is my first time smoking a belly without a cure.It's a keeper

I agree! This does look good. Looks like you got a belly with a lot of meat.

I used a piece of meaty belly around 3 lbs rubbed with a store bought rub. I cooked it like bacon without the cure or the brine.It got three hours of maple and pecan and another hour or so wrapped in foil with slices of apple until the i.t. was around 190 f and then I crisped it up under the broiler. It was very tasty

Thanks for the update on your pork belly cathouse willy!!! Will be trying it as soon as it cools down a tad :)
