Temperature setting

I am doing a 5 pound batch of smokies in the old original and have the PID set to 165-170 degrees. Seeing as it's winter, should I set the PID higher to something like 200-210 degrees?

Only if  it is during the preheat, you are figuring the loss of heat after loading sausage, and then lower the temperature after loading. Otherwise I would set the PID at the temperature you usually smoke/cook your sausage. The PID will use the maximum power of your element(s) until the desired temperature is reached, so setting it higher will not speed up the heating the cabinet. If you are planning to leave it at that higher temperature during the entire cook, you have a greater risk of fatting out your sausage..
