Trying Cheese For the first time...any suggestions

Thanks.  I know what you mean.  I brought some in for lunch today.  By the time everybody tried it it was all but gone.  Time to make some more.

One way I found to beat the heat was to do 20 Kg's of cheese at a time(44 lbs)5 mozza ,5 med cheddar,5 aged cheddar and 5 Edam (room for about 3 more pounds  :'(   )  :D   I'm smoking it with alternate apple /pecan for 2 hrs.Internal temp of the cheese should NEVER exceed 75 F I have found from past experimenting outside temp now is 54 F after 1 hr cheese temp is 64F.
Wrap it in vacume bags ..................before you now it X-mas is here  ::)




AND MAKE SURE YOUR REAR HEATER IS OFF!jUST ABOUT LOST THE WHOLE LOAD....CRAP!
