Venison Roast

Going to do my first piece of venison.  Any suggestions, recipes, tips, temperatures, times, wood, etc., would be greatly appreciated!!

Cold smoke it, then grill it over high heat. That roast is going to be very lean!

That's about what I did to some elk the other day. I cold smoked some steaks and put them in the fridge overnight then oiled them down with EVOO and grilled them.

The roast I had was cold smoked then hit the refer overnight then I did a beer and veggie braise sort of like a pot roast. That came out wonderful.

Cover with bacon and spritz for moisture. Don't take it to too high of a temperature or it will dry out. This is very lean meat and cooks rather quickly.

Here are some pics of my deer loin. I smoked mine at 225* until IT was 140* and then pulled it and wraped it in foil and let it rest for about 20 min. Hope you enjoy!!!

Picture looks great but the screen still tastes like plastic so it was not as enjoyable as being there.  Did get a little tingle on the tounge near the bottom of the screen where the power comes in.   ;D
